Hi Prime Timers! I hope you all had a wonderful Thanksgiving Holiday. I certainly did. The day started with the Green Bay Packers beating the Detroit Lions, giving my Eagles a little breathing room in the NFC race. Since I’m an Eagle fan, I pretty much ignored the Cowboy game. Just kidding, I’m a football junky. The best part of the day was when the family started arriving with my best buddy Harper. Harper is our son’s family dog. She’s a rescue and would remind you of a Jack Russel terrier. Really good girl, smart and playful with a mischievous personality. I love the way she reacts when she sees me. She can’t contain her excitement and always brings a big smile to my face.
Two years ago I was diagnosed with Sillyass (Celiac) disease which means I need to be gluten free. It was a challenge in the beginning but after trying different gluten-free food and drinks and picking my favorites, it’s been a pretty easy transition. I do love pasta, pizza and bread so finding the right switch was a challenge. Through word of mouth and trial and error, I found some great substitutes that are very satisfying. I have to say, for the most part, I really don’t miss the old gluten products except for the homemade Ravioli we make every year for Christmas. It’s been a tradition in our family for a few decades when we first made them with Deb’s mom Evelyn. After she passed, the tradition continued and now the baton has been passed to our son, daughter-in-law and granddaughters. It’s a special time and our hearts swell watching them step into their pasta-making positions. And then the fun begins!!
The past two years we did try to make gluten-free Ravioli along with our regular recipe but the dough was very hard to work with and it was very frustrating. Having said that, we’re going to try them again this year and fingers crossed will have a better outcome. Oh yeah, while all this is going on, Harper is on the prowl for anything that falls to the floor….
Well, I told you to be patient with the Broncos. If I didn’t I meant to. How about it? Bronco Country is starting to get back in the race to respectability. The defense is standing tall while the offense plows ahead. The perfect combination. They knocked off the Kansas City Chiefs! That was a great win. It’s fun to see the team develop and move in the right direction…..
